Fiesta Chicken Quesadillas

  • 8 ounces rotisserie chicken
  • 1 tomato, red
  • 2 stalk green onion
  • 4 ounces cheddar cheese
  • 1 teaspoon chili powder
  • 1 teaspoon cumin, ground
  • 1 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon dried oregano
  • 8 medium tortilla, whole wheat

Serve With

  • 1/2 cup Greek yogurt, plain
  • 1 medium avocado
  • 4 cup, diced watermelon


  • Preheat oven to 350 degrees.
  • Shred your precooked chicken (in this case we are using a store bought rotisserie). Dice tomato and chop green onions. Place in a large mixing bowl with shredded cheese, chili powder, cumin, garlic powder, salt, oregano; mix thoroughly. Toss with shredded chicken.
  • Place out 4 tortillas, fill each with an even amount of chicken mixture; top each off with a second tortilla.  Place quesadillas onto a baking sheet and bake for 5-6 minutes, or until browned and cheese is melted.  If you have a sandwich press, the tortillas could be toasted with it!
  • Cut quesadillas into quarters; serve with plain yogurt, chopped avocado and other toppings if desired; diced watermelon served on the side.
