Shred your precooked chicken (in this case we are using a store bought rotisserie). Dice tomato and chop green onions. Place in a large mixing bowl with shredded cheese, chili powder, cumin, garlic powder, salt, oregano; mix thoroughly. Toss with shredded chicken.
Place out 4 tortillas, fill each with an even amount of chicken mixture; top each off with a second tortilla. Place quesadillas onto a baking sheet and bake for 5-6 minutes, or until browned and cheese is melted. If you have a sandwich press, the tortillas could be toasted with it!
Cut quesadillas into quarters; serve with plain yogurt, chopped avocado and other toppings if desired; diced watermelon served on the side.
