Preheat sandwich press. (If you do not have a sandwich press, simply use a skillet as you would when making your typical grilled cheese sandwich). Cut pineapple into chunks, if desired heat sugar snap peas at this time as well.
Spread almond butter (or your favorite nut butter) onto bread, sprinkle each with coconut flakes and top off with second slice of bread; place into sandwich press and toast until warm. Repeat with each sandwich.
