Ingredients

Dressing

Salad

  • 2 medium cucumber
  • 1 medium bell pepper, green
  • 1/2 medium onion, red
  • 1 cup cherry tomatoes
  • 3 cup rotisserie chicken
  • 1/4 cup black olives, canned
  • 2 tablespoon parsley, fresh

Serve With

  • 4 medium kiwi
  • 2 ounce colby-jack cheese

Instructions

  • Mince garlic and whisk it together with the remaining dressing ingredients, set aside covered until salad has been assembled.
  • Dice cucumber, pepper and onion; slice tomatoes in half. Mix shredded rotisserie chicken in a bowl with diced vegetables, olives, and freshly chopped parsley; toss with dressing.
  • Serve with kiwi and cubed cheese.
