Mince garlic, chop cilantro; mix together in a bowl along with remaining marinade ingredients. Pour over fish and allow to marinate for 20 minutes.
Heat grill to medium-high (or if you prefer, preheat the oven to 400 degrees and bake fish for 15 minutes). Grill fish for 7 minutes, turn and allow to grill for 1 minute longer; remove immediately to avoid over-cooking.
Fill tortillas with fish and desired toppings; serve with cherries.
