Mahi Tacos

Ingredients

  • 5 ounces Mahi Mahi Fish
  • 1/4 teaspoon salt
  • 8 medium tortillas, corn
  • 1 teaspoon garlic
  • 1 cup cilantro
  • 1/4 cup canola oil
  • 1 tablespoon lime juice
  • 2 teaspoon chili powder
  • 1/4 teaspoon cumin, ground
  • 1/8 teaspoon oregano, dried
  • 1 cup shredded lettuce
  • 2 ounces cheddar cheese
  • 1 cup cilantro
  • 1 medium avocado
  • 1 cup salsa
  • 2 cup cherries

Instructions

  • Place fish in a glass dish, sprinkle with salt. 
  • Mince garlic, chop cilantro; mix together in a bowl along with remaining marinade ingredients.  Pour over fish and allow to marinate for 20 minutes. 
  • Heat grill to medium-high (or if you prefer, preheat the oven to 400 degrees and bake fish for 15 minutes).  Grill fish for 7 minutes, turn and allow to grill for 1 minute longer; remove immediately to avoid over-cooking. 
  • Fill tortillas with fish and desired toppings; serve with cherries.
