Heat oil in a large skillet over medium heat. Chop shallots, slice beets, add both to skillet. Cook for 5-6 minutes, then add the dry couscous. Toss together for 1 minute; add water and salt; bring to boil then reduce heat to simmer for 10 minutes. Remove from heat; stir in spinach.
