- 1 medium cucumber
- 1 medium bell pepper, orange
- 8 slice bread, whole wheat
- 1 1/2 cup hummus
- 2 cup spinach
- 2 cup grapes
Cut cucumber into slices and pepper into strips.
One one slice of bread, spread hummus. Add spinach, cucumbers and pepper slices. Top with other slice of bread.
Do for all four sandwiches. Serve with grapes.
