Preheat oven to 300° F. Line a baking sheet with parchment paper; set aside.
Toss oats, walnuts, coconut, almonds, brown sugar, cinnamon, nutmeg, and salt together in a large mixing bowl.
In a smaller bowl, mix melted coconut oil, maple syrup, and vanilla until well blended
Add liquid mixture to the dry ingredients and stir to thoroughly coat.
Pour mixture onto prepared baking sheet and spread out into an even layer.
Bake for 15-30 minutes until golden brown, stirring occasionally and watching carefully so it does not burn.
Cool completely before serving.
