Ingredients

  • 3 cup edamame, shelled
  • 1 clove garlic
  • 1 cup hummus
  • 1/2 cup cilantro
  • 1/2 teaspoon lemon juice
  • 1 medium bell pepper, yellow
  • 1 medium bell pepper, red

Instructions

  • Steam edamame to slightly warm up and soften.   Place garlic in food processor and mince; add edamame, hummus, cilantro and lemon juice; blend until smooth.
  • Serve with sliced peppers.
