Ingredients

  • 1 cup quinoa, uncooked
  • 1 1/2 cup edamame, shelled
  • 1 cup cherry tomatoes
  • 1 medium mango
  • 1/2 medium onion, red
  • 1 medium avocado
  • 3 cup, chopped kale
  • 1/8 cup pumpkin seed kernels

Dressing

Serve With

  • 2 medium peach

Instructions

  • Cook quinoa according to package directions; set aside to cool to room temperature.
  • Quarter the cherry tomatoes, dice the mango and onion, and slice the avocado. Add all to a large bowl along with kale and pumpkin seeds.
  • For the dressing: In a small bowl, whisk together all ingredients. Add to salad and toss well.
  • Slice or halve peaches. Serve quinoa salad at room temperature or chilled with peaches on the side.
