Ingredients

  • 1 cup orzo, dry
  • 15 ounce chickpeas (garbanzo beans), canned
  • 1 stalk broccoli
  • 1/8 teaspoon curry powder
  • 1/8 teaspoon black pepper, ground
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon sea salt
  • 1 tablespoon olive oil
  • 2 teaspoon lemon juice
  • 1/2 cup pine nuts, dried
  • 1/4 cup cranberries, dried, sweetened

Serve With

  • 2 medium orange

Instructions

  • Cook orzo according to package directions.  Meanwhile drain and rinse chickpeas; chop broccoli into smaller, bite-sized pieces.
  • Toss orzo in a large bowl with all ingredients, toss to evenly coat.
  • Serve with orange wedges.
