Sweet Wheat Berries

  • 2 cup wheat berries
  • 3 medium orange
  • 1/4 cup coconut oil
  • 2 tablespoon honey
  • 4 leaves mint, fresh
  • 1/4 teaspoon sea salt
  • 4 ounces walnuts
  • 2 medium pear
  • 2 medium carrot


  • Make wheat berries as directed on package.  Allow to cool to room temperature.  
  • While they cook, zest 1/2 of one orange and mix in a small bowl with juice of one orange, oil, honey, 2-3 (chopped) mint leaves and salt.  
  • Peel and section the remaining 2 oranges, cut wedges in half and add to the bowl with wheat berries along with the mint dressing.  Chop walnuts and toss in with wheat berries, mix well. 
  • Serve each bowl of wheat berries with 1/2 pear and a few carrot sticks.
