  • Slice cucumbers into thick rounds. Use a melon baller (or  small spoon) to scoop out a small section in the center of each slice, making a small "cup"; set aside.
  • Chop bell pepper and add to food processor along with hummus; pulse a few times to gently blend. Spoon into the cucumber "cups," and garnish each with a dash of paprika. Serve.
