In a large sauce pot, add olive oil and heat over medium. Chop onion, celery, carrots, mince garlic; add all to pot. Cook for 8-10 minutes, stirring occasionally.
Next add spices and chicken broth; turn down heat to simmer, cook for 10-15 minutes.
Meanwhile, mix dumpling ingredients (will be doughy) and cut chicken into cubes.
Sitr chicken and parsley into pot; drop dough by the teaspoon into pot; simmer until chicken has cooked through and dumplings puff up.
