Chicken & Dumplings

When you want a warm and hearty dinner, a bowl of chicken and dumplings hits the spot!

Ingredients

  • 1/2 pound chicken breast
  • 1 medium onion
  • 2 clove garlic
  • 4 stalk celery
  • 4 medium carrot
  • 4 tablespoon olive oil
  • 1 teaspoon mustard, ground
  • 1/8 teaspoon turmeric, ground
  • 1 tsp bay leaf
  • 8 cup chicken broth, low-sodium
  • 1/4 cup chopped parsley, fresh
  • 1/4 teaspoon black pepper, ground

Crust

  • 3/4 cup flour, all-purpose
  • 3 tablespoon Parmesan cheese, grated
  • 1 tablespoon thyme, dried
  • 1/2 teaspoon rosemary, fresh
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper, ground
  • 3/4 cup milk

Instructions

  • In a large sauce pot, add olive oil and heat over medium.  Chop onion, celery, carrots, mince garlic; add all to pot.  Cook for 8-10 minutes, stirring occasionally.
  • Next add spices and chicken broth; turn down heat to simmer, cook for 10-15 minutes.
  • Meanwhile, mix dumpling ingredients (will be doughy) and cut chicken into cubes.
  • Sitr chicken and parsley into pot; drop dough by the teaspoon into pot; simmer until chicken has cooked through and dumplings puff up.
  • Grab any fruit you may have on hand and serve with soup!
