  • Mince garlic and dice the onion.
  • Blend together the first 11 ingredients, through cinnamon. Add to slow cooker along with pork.  Cook on low for 8-10 hours.
  • Dice mango, chop red onion and cilantro; add to a sealable container and toss with lime juice; place in refrigerator until ready to use.
  • When pork is through cooking, shred it using two forks; mix in the juices.
  • Serve pork on tortilla and top with mango mixture.  Roll up and enjoy!
