Ingredients

  • 1/4 cup butter, unsalted
  • 1/2 cup almond butter
  • 1/2 cup honey
  • 2 large egg
  • 1 1/2 teaspoon vanilla extract
  • 1 cup flour, whole wheat
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3 tablespoon flaxseed, ground
  • 1 teaspoon cinnamon
  • 2 cup oats, dry
  • 2 tablespoon Brewers yeast
  • 1/4 cup coconut flakes
  • 3/4 cup walnuts, chopped
  • 1/2 cup chocolate chips, dark

Instructions

  • Preheat oven to 350 degrees F.
  • In a large mixing bowl add room temperature butter, almond butter and honey. Mix well. Add eggs and vanilla and thoroughly mix together.
  • In a separate bowl, add flour, baking soda, baking powder, salt, flax meal, cinnamon, oats and Brewers yeast. Gradually add to the wet ingredients and stir after each addition of flour.
  • Gently mix in the coconut flakes, walnuts and chocolate chips. Drop by tablespoons onto a baking sheet. Bake for 9-11 minutes, or until the bottom of the cookie is slightly brown. Allow to cool before eating. Makes 24 cookies.
