Cinnamon Peach Muffin
These Cinnamon Peach Muffins are loaded with fresh peaches, and are super moist with a delightful cinnamon flavor.
Servings: 12 muffins
- 1/2 cup applesauce, unsweetened
- 1/2 cup Greek yogurt, plain
- 1 large egg
- 1 teaspoon vanilla extract
- 1/3 cup sugar
- 1 cup flour, whole wheat
- 1 cup flour, all-purpose
- 1 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1/2 teaspoon salt
- 1 1/2 cup peaches, sliced fresh or frozen
Preheat oven to 350°F. Place paper liners into muffin tin, or grease muffin tin well. Set frozen peaches out to thaw if using frozen.
Mix together applesauce, yogurt, egg, vanilla, and sugar until creamy.
Add flours, baking soda, cinnamon, and salt to the sugar mixture and stir until combined.
Chop peaches into bite-sized pieces and fold into batter.
Distribute batter evenly among paper liners. Sprinkle with coarse sugar, if desired.
Bake for 15-20 minutes or until a toothpick inserted in the center of a muffin comes out clean.
