  • Combine coconut oil, honey and peppermint extract.  Place in the freezer for 15-20 minutes or until firm enough to scoop out.
  • Scoop out and form little balls, then press flat into disks about the size of a silver dollar. Place in the freezer again for 15-20 minutes.
  • Melt dark chocolate chips and coconut oil together.  Dip frozen "disks" into the melted chocolate using a fork and place on parchment paper.  Place back into freezer to let set.  Enjoy!
