Ingredients

  • 1 teaspoon chili powder
  • 2 1/2 teaspoon cumin, ground
  • 2 1/2 teaspoon garlic powder
  • 1 1/2 teaspoon onion powder
  • 3/4 teaspoon salt
  • 1/2 medium onion
  • 1 medium bell pepper, red
  • 1 tablespoon olive oil
  • 1 pound beef, ground, 95% lean
  • 1 medium avocado
  • 1/4 cup salsa
  • 4 medium rolls, hard

Serve With

  • 4 medium apple

Instructions

  • Preheat oven to 400 degrees.
  • In a small mixing bowl, combine chili powder, cumin, garlic and onion powders, and salt. Mix well.
  • Slice onion and pepper into rings. Place in a mixing bowl and sprinkle with 2 tablespoons of the spice mix and drizzle with olive oil; toss together to coat. Lay on a baking sheet and bake for 15 minutes or until they begin to brown and soften a bit.
  • Meanwhile, add beef and remaining seasoning to a large bowl and mix together. Shape beef into patties. Heat an indoor (or outdoor!) grilling pan over medium-high heat. Add burgers without overlapping. Cook 5-6 minutes per side, browning and checking for doneness: they should no longer be pink in the center. Depending on the thickness of the burgers, timing will vary.
  • Slice avocado and apples. Serve burgers on rolls topped with salsa, avocado slices, and roasted veggies. Serve apples on the side.
