Grilled Pork & Zucchini Kabobs

Thin slices of zucchini and tender pieces of pork make these kabobs a Summer favorite!

  • 4 medium peach
  • 8 slice bread, french

Instructions

  • Heat grill to high; rub pork with 1 tablespoon lemon pepper and 1 teaspoon of salt. Cut pork into bite size pieces.
  • While grill heats up, prepare the vegetables. Cut zucchini into ribbons using either a mandolin, or a vegetable peeler. Sprinkle with remaining tablespoon of lemon pepper and salt and pepper to taste.
  • Skewer the pork and zucchini, alternating however you like.  To thread the zucchini ribbon, carefully start it at the long end and just curl it into an "S" shape. You can also roll them up and skewer through the middle.
  • Grill for a total of 10-12 minutes, rotating to get even grill marks.
  • Serve with peach slices and french bread on the side.
