Ingredients

  • 1 cup brown rice, raw
  • 1 clove garlic
  • 3 tablespoon soy sauce, low sodium
  • 2 medium lime
  • 1 teaspoon ginger root, fresh
  • 1 teaspoon black pepper, ground
  • 2 1/2 steak beef flank steak, lean
  • 1 tablespoon honey
  • 3 tablespoon olive oil
  • 1 cup diced mushrooms, portabella
  • 1 medium bell pepper, red
  • 4 cup broccoli, florets

Instructions

  • Cook rice as directed on package. Cover and set aside.
  • Thinly slice garlic, and toss in a large bowl with soy sauce, zest of half the lime, grated fresh ginger, and 1/2 teaspoon pepper.
  • Cut beef into thin strips and then mix with soy sauce mixture; cover and refrigerate to marinate at least 30 minutes, or overnight.
  • In a small bowl, mix juice from one lime (the recipe calls for 1/4 cup, so a second lime may be needed), honey, and 1/2 teaspoon pepper; set aside.
  • Preheat oven to 450 degrees.  Slice mushrooms, pepper, and broccoli into small bite sized pieces and arrange on cookie sheet. Drizzle with remaining 2 tablespoons of olive oil, and sprinkle with salt. Roast in hot oven for 8-9 minutes.
  • Heat a large skillet over medium-high heat; pour in 1 tablespoon of oil. Cook beef for 3 minutes, stirring, cook until no longer pink (or to desired doneness).  Pour honey sauce over top and cook for 1 more minute.
  • Serve beef combined with roasted veggies over rice. (3/4 cup beef and veggies, 1/2 cup rice)
