Peel and slice carrots. Grate orange peel. Preserve slices.
On a large rimmed baking sheet, arrange carrots & sliced oranges in single layer.
Add 2 tablespoons olive oil, orange peel, thyme and salt & pepper. Mix honey and orange juice then pour over carrots & oranges. Cover with foil and roast for 30 - 35 minutes. You can choose to remove the foil after 15 minutes to allow more browning.
