Honey Orange Roasted Carrots

This recipe for Honey Orange Roasted Carrots makes for a great side dish that kids will love.  Plus the citrus and honey helps bring out the natural sweetness in the carrots.

  • Pre-heat oven to 375° F.
  • Peel and slice carrots.  Grate orange peel.  Preserve slices.
  • On a large rimmed baking sheet, arrange carrots & sliced oranges in single layer.
  • Add 2 tablespoons olive oil, orange peel, thyme and salt & pepper. Mix honey and orange juice then pour over carrots & oranges. Cover with foil and roast for 30 - 35 minutes. You can choose to remove the foil after 15 minutes to allow more browning.
