Preheat oven to 400 degrees.
Wash and trim the ends of the Brussels sprouts.
Next, put them though a food processor using the slicing plate.
Arrange the sprouts in a thin, even layer on a parchment covered baking sheet.
Add olive oil and cheese to the sprouts and mix around a bit with your hand.
Add a few generous cranks of fresh pepper and toss in the preheated oven.
Check your Brussels sprouts after ten minutes and stir around. If you have some sprouts on the edges browning nicely, push them to the center of the pan and move over to the edge some that are still bright green.
Check again after another ten minutes. At this point they may be ready. Feel free to roast a few more minutes if you want even more crispiness. Watch closely and remove before you get burned pieces.
Remove from oven and salt to taste.
Serve alone as a salty snack, as a side dish, or toss together with roasted squash and pasta for a main dish.
