In a small saucepan, over low heat, combine peanut butter, honey or agave, vanilla, and coconut oil. Stir constantly until melted.
In a large bowl, combine oats, flax, sunflower seeds, and peanuts. Top with melted peanut butter mixture and mix until completely combined. You may need to use your hands to get it all incorporated.
Place mixture in the refrigerator for about 15 minutes to cool down. You don't want the chocolate chips to melt.
Once the mixture has come to more of a room temperature, add the mini chocolate chips and incorporate them throughout the mixture.
Roll 2-Tablespoons worth of dough between your hands to form a ball. Place on a parchment-lined tray or baking sheet, Repeat with remaining dough.
Place tray in the refrigerator for about an hour to set completely before putting in an airtight zipper-bag or container. You can opt to freeze them also. Just take them out of the freezer an hour or two before you want to eat them.
