Stuffed Berry French Toast

  • Chop strawberries and mix with ricotta cheese.
  • Lay out two pieces of whole wheat bread. Spread berry and ricotta filling in the middle. Squish the two slices of bread together to make a sandwich and to secure the filling so it doesn't spill out.
  • Dip the sandwich into the egg mixture on both sides.
  • Cook on hot griddle, on both sides until the egg is all cooked and no longer wet or runny.
