In a large saucepan, bring broth and olive oil to a boil. Add couscous, chopped broccoli and cauliflower. Reduce heat to a simmer and cook 5-10 minutes or until veggies are tender. Add chopped sun-dried tomatoes and cook an additional 1-2 minutes to soften.
Cut pita into triangles. Top each serving of soup with chopped green onions and sliced avocado. Serve with pita and grapes on the side.
