Prepare vegetables by chopping onion, garlic, carrots, celery and bell peppers. Also chop 4 ounces of ham and your fresh herbs. (If using dried herbs reduce amounts to 1/3 of the original.)
Add veggies and seasonings to slow cook. Add beans. Let cook for 6-8 hours on low or 4-5 hours on high or until beans are soft. Discard bay leaf. Stir in lemon juice.
