For the salad: Chop or slice peaches and toss together in a large bowl with spinach, pecans, and feta.
For the dressing: In a small bowl, whisk together 2 tablespoons lemon zest, 1/2 cup lemon juice, minced garlic, minced shallots and rosemary. Slowly whisk in olive oil. Season with salt and pepper, if desired. Store dressing in an airtight container and add to salad just before serving.
