Whisk eggs together (or cook one at a time!). Heat a medium sized skillet, spray with cooking spray, add eggs. Cook eggs until no longer runny, stirring occasionally to scramble. Shred cheese. Just as eggs finish cooking, add cheese, remove from heat and allow cheese to melt while you toast English muffins. Layer each muffin with an equal amount of sauce, spinach leaves, and eggs.
Toss together sliced grapes and cut pineapple, serve with egg pizzas.
