Place chicken in crockpot. Pour onto the top oil, salt, pepper, Italian seasoning, cider vinegar, garlic, red pepper, dry white wine (or broth), and red wine vinegar. Give it a quick stir. Cook on low 6-8 hours. Once cooked, shred with a fork.
Prepare pasta according to package and serve chicken over the top, with a side salad and apples. (I stirred the pasta after it was cooked into the crockpot to get coated with all the juices from the cooked chicken)
