- 1 cup Millet, cooked
- 1 cup BARLEY, PEARLED, COOKED
- 1 cup, chopped bell pepper, red
- 1 pepper bell pepper, orange
- 1/2 cup corn, canned
- 1 cup, chopped bell pepper, green
- 1/2 cup, chopped onion, red
- 1 cup, pieces or slices mushrooms, white
- 1 cup Red Beans, Canned
- 1/4 cup olive oil
- 1/2 tsp salt
- 1/2 tsp, ground black pepper, ground
- 1/2 tsp, ground OREGANO, DRIED
- 1/2 tsp parsley, dried
- 1/2 tsp, ground BASIL, DRIED, GROUND
- 1/2 cup, chopped walnuts
Prepare the barley and millet according to package directions.
Chop all vegetables; mix everything including olive oil and spices, in a large bowl. Serve or store covered in refrigerator.
