Scrub potatoes and cover in foil; pierce each one with a fork to allow air to dissipate. Place in oven and bake for 30-45 minutes or until potatoes are tender when squeezed. (Don't forget to use a hand mitt when checking!)
Cook bacon in a medium skillet until crispy; cool and crumble.
Serve potatoes with bacon, cottage cheese, chopped green onions, salsa, and chopped broccoli. Allow each family member to assemble in any way they like. Encourage at least one veggie to go with it.
