Instructions
Cook quinoa according to package directions; set aside to cool to room temperature.
Quarter the cherry tomatoes, dice the mango and onion, and slice the avocado. Add all to a large bowl along with kale and pumpkin seeds.
For the dressing: In a small bowl, whisk together all ingredients. Add to salad and toss well.
Slice or halve peaches. Serve quinoa salad at room temperature or chilled with peaches on the side.
