Holiday Energy Bites

Servings: 6 2 energy bites
- 1 cup pistachios, unsalted
- 1/2 cup cashews
- 1/2 cup coconut flakes
- 1 cup oats, dry
- 1 tablespoon coconut oil
- 2 tablespoon honey
- 1/2 cup raspberries, freeze dried
Add the nuts, coconut, oats, coconut oil, and honey to a blender or food processor. Blend together by pulsing, until mixture becomes sticky.
Add raspberries and pulse to gently combine without breaking down completely.
Shape into 1-inch balls. Chill for 15-20 minutes before serving.
