Finely dice carrot, celery and onion. Add to a large saucepan with olive oil. Cook for 5 minutes and then add minced garlic, tomato paste, thyme, oregano, salt and pepper . Cook for 2 minutes and add chicken broth. Stir well.
Transfer to your slow cooker.
In the same saucepan, add the ground turkey. Use a wooden spoon to break up the meat into small pieces. Once browned, add the milk. Let it absorb into the turkey. This should take a few minutes. Transfer to the slow cooker.
Add crushed tomatoes; stir well to combine.
Cook on low for 8-10 hours or on high for 4-6 hours. Serve over pasta.
Instant Pot Instructions
Turn Instant Pot to saute. Add diced carrot, celery and onion. Cook for 5 minutes and then add minced garlic, tomato paste, thyme, oregano, salt and pepper. Mix well.
Add the remainder of the ingredients, chicken broth, ground turkey, milk, and crushed tomatoes. Mix well making sure to break up the ground turkey.
Set to Meat/Stew setting for 35 minutes. Close the lid.
When the time is up, let it natural pressure release for 5 minutes.
