  • In a large mixing bowl, add the softened cream cheese, lemon juice and vanilla. Using an electric mixer, beat until creamy.
  • Add the powdered sugar and beat just until smooth, being careful not to over-mix.
  • Using an icing or rubber spatula, spread a thick layer of cream cheese icing onto your watermelon 'crust'.
  • Top your watermelon pizza with the prepared fruit in a decorative pattern.
  • Finish by drizzling with honey, strawberry glaze, and mint leaves, if desired.
  • Slice, serve, and enjoy!

Notes

  • Make sure to prepare and serve your watermelon pizza immediately, as the juices from the fruit can start to pool on the cream cheese topping. 
  • Patting the watermelon slice down with a paper towel before adding the cream cheese topping will make spreading easier. 
  • The watermelon pizza should be served and consumed immediately. It can be refrigerated, but the water from the fruit may compromise the cream cheese mixture.
