Allergy-Friendly Holiday Buckeyes
Creamy sweet inside with a chocolate shell all perfectly safe for those with common food allergies!

Servings: 20 buckeyes
- 1 cup natural sunbutter
- 1/4 cup softened butter or if you are dairy free use palm shortening
- 1 cup organic pure cane powdered sugar
- 1/2 cup white rice flour
- 1/2 tsp sea salt
- 1 10oz bag enjoy life chocolate chips or chunks
Combine everything but the chocolate in a medium mixing bowl using hand beaters.
Roll the sunbutter mixture into balls and place them on a Silpat or parchment paper lined baking sheet and freeze for one hour.
Use a double boiler method to melt the chocolate. You could alternatively melt the chocolate in the microwave - they don't really have nourishment to them to destroy in the microwave anyway, so I wouldn't worry about it for just this once a year treat prep! Just melt for about a minute and stir, and then continue to microwave about 20 seconds and stir until completely melted.
Use a toothpick to pick up the frozen sunbutter balls, dip in the melted chocolate, and then place the chocolate dipped sunbutter balls back on the Silpat lined baking sheet. Freeze the dipped buckeyes for an hour to set the chocolate.
