Cookie Crust

  • Preheat the oven to 350°F
  • In a medium bowl, mix together the flour, oats, baking powder, cinnamon, and salt.
  • In a large bowl of a stand mixer, beat the butter and brown sugar until creamy. Beat in the eggs and vanilla extract until well combined. Gradually stir in the flour mixture until a soft dough forms.
  • Press the dough into a 12-inch pizza pan or a baking sheet, forming a 1/4-inch thick crust. Bake for 12-15 minutes or until lightly browned. Let cool completely.

Frosting

  • In a medium bowl, beat the cream cheese until smooth. Add greek yogurt, sugar, orange juice and vanilla extract and beat together until smooth and creamy. When the cookie crust has cooled, spread the frosting onto the top of the pizza base.
  • Slice the fruit:
    Strawberries - Cup the tops off and slice lengthwise.
    Kiwi - Peel and slice into rounds, then cut each round in half.
    Mango - Slice close to the seed of the mango on each side. Peel each half and then place face down on the cutting board. Slice into thin strips.
  • Arrange the sliced fruit on top of the frosting in any pattern you like. Serve immediately, or chill until ready to serve.
