Healthy Hawaiian Haystack Skillet

Ingredients

  • 2 chicken breast
  • 1 cup coconut milk
  • 1 cup chicken broth, low-sodium
  • 1 cup brown rice, raw

Toppings

  • 2 cup pineapple
  • 3 medium tomato, red
  • 2 stalk green onion
  • 1/2 cup coconut flakes
  • 1/4 cup slivered almonds

Instructions

  • Cut chicken into bite size pieces
  • In a saute pan, cook chicken in 1 tsp oil over medium high heat, just until browned on the outside.
  • Add coconut milk, chicken broth and rice. Bring to a boil.
  • Reduce heat and cover. ┬áSimmer over low until liquid is absorbed and rice is softened.
  • Meanwhile, prepare toppings.
  • Once chicken mixture is done, remove from heat.
  • Layer toppings over chicken mixture. ┬áServe warm.
