Quinoa Cookies

Servings: 16 1 cookie

Ingredients

  • 1/3 cup oil, avocado
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup packed brown sugar
  • 1/2 cup flour, whole wheat
  • 1/2 cup quinoa flour
  • 1 teaspoon baking powder
  • 1/2 cup oats, dry
  • 1/2 cup chocolate chips, dark

Instructions

  • Preheat oven to 350 degrees F.
  • In a large mixing bowl, whisk together oil, egg and vanilla. Add sugar and mix thoroughly.
  • Add flours, baking powder and oats and completely mix in with wet ingredients.
  • Gently mix in chocolate chips.
  • Scoop out by tablespoons on to a baking sheet placing cookies 1 inch apart.
  • Bake for 8-10 minutes, cooking less for a softer cookie and longer for a crispier bite.
