- 1/3 cup oil, avocado
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup packed brown sugar
- 1/2 cup flour, whole wheat
- 1/2 cup quinoa flour
- 1 teaspoon baking powder
- 1/2 cup oats, dry
- 1/2 cup chocolate chips, dark
Preheat oven to 350 degrees F.
In a large mixing bowl, whisk together oil, egg and vanilla. Add sugar and mix thoroughly.
Add flours, baking powder and oats and completely mix in with wet ingredients.
Gently mix in chocolate chips.
Scoop out by tablespoons on to a baking sheet placing cookies 1 inch apart.
Bake for 8-10 minutes, cooking less for a softer cookie and longer for a crispier bite.
