Golden Lentil Soup

  • 1 tablespoon olive oil
  • 1 medium onion
  • 2 medium carrot
  • 3 stalk celery
  • 4 teaspoon cumin, ground
  • 2 cup lentils, raw
  • 6 cup vegetable broth
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper, ground
  • 3 ounce tomato paste, canned


  • Dice onion, carrots, and celery.
  • Place a large skillet over medium heat. When the pan is hot, add the oil and swirl to coat the pan. Add the diced veggies and cumin. Cook, stirring occasionally, for about 10 minutes, or until slightly softened.
  • Add the lentils and vegetable stock. Bring to a boil, then turn the heat all the way down to the lowest possible setting. Partially cover, and simmer gently for 15-20 minutes, or until the lentils are completely soft.
  • Add salt, pepper, and tomato paste; stir well. Taste for seasoning, and add more if necessary.
