Add the water and oil and stir until a dough starts to form. Mix together first with a large spoon, then with your hands if it gets too hard with a spoon.
Once your dough is combined, place on a lightly floured surface and knead the dough for 2-3 minutes until the dough is smooth. Cover with a clean towel and let it rest for 10 minutes.
Divide the dough into 8 pieces. Roll each piece of dough into a 7" circle trying to get it very thin. Place each tortilla on a piece of parchment or wax paper and stack.
In a greased cast-iron or other heavy skillet, cook tortillas over medium heat until lightly browned. Watch them carefully because it will take less than 1 minute to cook on each side.
Once the tortillas are cooked, transfer to a tortilla warmer or plate and cover with a clean cloth. Enjoy!
