Easy Cheesy Bean Toast

Bean on toast is simple and delicious and fast for when you don't have time to cook.

  • 3 medium tomato, red
  • 1/8 teaspoon salt
  • 1/8 teaspoon black pepper, ground
  • 2 cup pinto beans, canned
  • 1/2 cup barbecue sauce
  • 8 slice baguette
  • 1 stalk green onion
  • 1/2 cup Parmesan cheese, grated


  • Slice tomatoes ½ inch thick. Arrange on a parchment lined sheet pan and sprinkle with salt and pepper.
  • Broil for 5 minutes, or until tomatoes start to wilt or brown.
  • While tomatoes are broiling, mix cooked beans, barbecue sauce together in a bowl.
  • Remove tomatoes from pan and set aside.
  • Arrange slices of bread on pan, then top with beans.
  • Then add tomato slices, then green onions, and then Parmesan.
  • Broil on high for 3 minutes, or until cheese starts to bubble and brown.
