Valentine's Veggies - Special Dinner for Awesome Kids
Fondue makes dinner extra special and is also a fun and delicious way to include more veggies in your meal.
Prep Time1 hr
Cook Time1 hr 20 mins
Servings: 4 servings
- 3 lbs chicken legs
- 1/2 cup barbecue sauce
- 1 lb Monterey cheese, shredded
- 2 tablespoon flour
- 1 cup milk
- 1 clove garlic crushed
- 2 zucchini, sliced
- 1 bunch broccoli, cut into individual stalks
- 1 bunch asparagus
- Strawberries! or any fruit
- 1 cup Melting chocolate
- 1/2 cup Half and half or cream
Pre heat oven to 350.
Place chicken legs into a 9X13 pan.
Pour barbecue sauce over chicken and cover with foil.
Bake for 45-60 minutes, or until your chickens internal temperature reaches 165 degrees.
*Caution! Adult supervision is required! You can keep the temperature fairly low, or even remove it from the heat, and it will still be 'saucy' throughout dinner. Don't let your kids use the fondue if it is scalding hot.
After you shred the cheese, place in a bowl, where you can sprinkle the flour over the cheese.
Give it a quick stir to coat the cheese with the flour.
In a fondue pot or sauce pan, pour milk in and add the garlic.
Heat the milk first till it begins to get warm and bubbly.
Add the cheese and stir.
Turn your heat down and allow the cheese to melt slowly. Once cheese is melted, your fondue is ready.
Wash and cut your vegetables.
Heat a pot of water, any amount, till boiling.
Dunk your vegetables into the boiling water for 2 minutes (you can work in batches if your pot isn't big enough for it all).
After two minutes, remove veggies with a slotted spoon and dunk them in a bowl of ice water.
