Preheat oven to 350 degrees.
Peel, core, and chop pears. Place in a 8x8 baking dish and sprinkle with lemon juice, sugar and cinnamon. Pour apple juice over pears. Gently toss.
In a food processor, combine flour, oats, brown sugar, and cinnamon, salt and cold butter. Pulse until combined.
Sprinkle topping onto pears.
Bake at 350 degrees for 30 minutes.
Place pan on top rack of oven for an additional 10 minutes, or until topping is golden brown.
