Veggie Sandwich

  • 8 slice bread, whole wheat
  • 1/3 cup cream cheese
  • 1/2 cup, chopped walnuts
  • 1 cucumber (8-1/4″) cucumber
  • 4 medium carrot
  • 4 cup, diced watermelon


  • Toast bread.  Spread each of the 4 slices with cream cheese, sprinkle chopped walnuts over cream cheese.  Slice cucumber and add to sandwich.  Peel and grate one carrot; add shreds to sandwiches.  Cut the remaining carrots into sticks.  Top off each sandwich with second slice of bread; cut in half.  Serve with watermelon.
