  • 1 cup cherry tomatoes
  • 2 medium carrot
  • 2 cup broccoli, florets
  • 1/2 medium bell pepper, yellow
  • 1/4 medium onion, red
  • 2 tablespoon olive oil
  • 1/8 teaspoon salt
  • 1/8 teaspoon black pepper, ground


  • Halve cherry tomatoes, peel and dice carrots, chop broccoli, and dice bell pepper and onion.
  • Toss all ingredients together with olive oil. Season with salt and pepper to taste.
