Mini Veggie Cups
Ingredients
- 1 cup cherry tomatoes
- 2 medium carrot
- 2 cup broccoli, florets
- 1/2 medium bell pepper, yellow
- 1/4 medium onion, red
- 2 tablespoon olive oil
- 1/8 teaspoon salt
- 1/8 teaspoon black pepper, ground
Instructions
- Halve cherry tomatoes, peel and dice carrots, chop broccoli, and dice bell pepper and onion.
- Toss all ingredients together with olive oil. Season with salt and pepper to taste.
- Enjoy your rainbow!
