- 1/4 cup cream cheese
- 4 slice Sandwich Thins, Wheat
- 1 medium tomato, red
- 1 medium avocado
- 4 leaf outer lettuce
- 4 stalk celery
- 4 medium nectarine
- 4 ounce goat cheese
- Slice tomato and avocado; cut celery into smaller sticks.
- Divide sandwich thins and spread cream cheese onto the bottom halves. Add tomato, lettuce, and avocado; finish by adding the top halves, forming 4 sandwiches.
- Serve sandwiches with nectarines and celery on the side, with goat cheese for dipping.
