- 4 medium sweet potato
- 2 tablespoon olive oil
- 1/2 teaspoon salt
- Preheat oven to 250° F.
- Thinly slice sweet potatoes and place on a baking sheet, being careful not to overlap the slices. (It may be necessary to cook in multiple batches.)
- Drizzle slices with olive oil and sprinkle with salt.
- Bake for 1 hour, flipping and moving around every 15 minutes. Serve warm.
- Store any extras in an airtight container or baggie.
