Soupy Soup
Ingredients
- 4 cup vegetable broth
- 1 tablespoon olive oil
- 1 cup couscous, dry
- 1 cup broccoli, florets
- 1 cup cauliflower, florets
- 1/2 cup sun-dried tomatoes
- 1 stalk green onion
- 1 medium avocado
Serve With
- 2 large pita, whole wheat
- 4 cup grapes
Instructions
- In a large saucepan, bring broth and olive oil to a boil. Add couscous, chopped broccoli and cauliflower. Reduce heat to a simmer and cook 5-10 minutes or until veggies are tender. Add chopped sun-dried tomatoes and cook an additional 1-2 minutes to soften.
- Cut pita into triangles. Top each serving of soup with chopped green onions and sliced avocado. Serve with pita and grapes on the side.
