- 1 pound chicken breast
- 1 cup salsa
- 4 medium zucchini
- 2 cup pineapple
- 1 cup brown rice, raw
- Toss chicken and salsa into a crockpot. Cover and cook on low for 6-8 hours.
- About 45 minutes before the chicken has finished cooking, cut zucchini and pineapple into large chunks and add to the crockpot as well.
- Prepare rice as directed on the package.
- Serve cooked rice topped with chicken, fruit, and veggie mixture. Enjoy! (Serving size: 1/2 cup shredded chicken, 1/4 cup pineapple, 1 cup zucchini).
